We at DKR, active since 1983 in the construction and maintenance of <\/span><a href=\"https:\/\/drinkatering.com\/en\/office-water-dispensers-2\/\" target=\"_blank\" rel=\"noopener\"><span style=\"font-weight: 400;\">office water dispensers<\/span><\/a><span style=\"font-weight: 400;\">, <\/span><a href=\"https:\/\/drinkatering.com\/en\/water-dispensers-in-schools\/\" target=\"_blank\" rel=\"noopener\"><span style=\"font-weight: 400;\">schools<\/span><\/a><span style=\"font-weight: 400;\"> e <\/span><a href=\"https:\/\/drinkatering.com\/en\/products-category\/horeca-resort-water-dispensers\/\" target=\"_blank\" rel=\"noopener\"><span style=\"font-weight: 400;\">Horeca sector<\/span><\/a><span style=\"font-weight: 400;\">we know that this aspect cannot be neglected. Since 1996 we have been realising <\/span><a href=\"https:\/\/drinkatering.com\/en\/products-category\/house-water\/\"><span style=\"font-weight: 400;\">Water Houses<\/span><\/a><span style=\"font-weight: 400;\"> and we also take care of their revamping, as was the case for those installed at Expo 2015. This experience has taught us how crucial it is to maintain high standards of maintenance to ensure the longevity and efficiency of the systems.<\/span><\/p>\n<h2><strong>The crucial importance of maintenance in water supply systems<\/strong><\/h2>\n<p><span style=\"font-weight: 400;\">Any dispensing system that provides a <\/span><a href=\"https:\/\/drinkatering.com\/en\/water-dispenser-office-purification-filtration\/\" target=\"_blank\" rel=\"noopener\"><b>filtration treatment<\/b><\/a><span style=\"font-weight: 400;\">or even cooling alone, changes the characteristics of the drinking water supplied by the waterworks. This is why it must be subjected to strict controls and periodic checks. Water is a foodstuff and its modification must not be dangerous for the user who drinks it. In particular, regulations require that the modification does not worsen the quality of water for food use.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">This is why the control and prevention system for food processing chains was created, whereby the risks in terms of bacteriological pollution, contamination and critical points of each process are thought out and studied. The <\/span><a href=\"https:\/\/drinkatering.com\/en\/evolution-drinking-water-regulations\/\" target=\"_blank\" rel=\"noopener\"><span style=\"font-weight: 400;\">Legislative Decree 18 of 23 February 2023<\/span><\/a><span style=\"font-weight: 400;\"> is the main reference point, classifying installations into different categories according to their level of risk and environment of use.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">The regulations identify the most critical environments and divide them into categories, starting with the most critical:<\/span><\/p>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Hospitals and old people's homes\u00a0<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Condominiums and housing<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Workplaces and schools with food production and canteens<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Workplaces without canteen and food production<\/span><\/li>\n<\/ul>\n<p><span style=\"font-weight: 400;\">The categories we are most interested in are the last two. The first is subject to food jurisdiction, the treatment process is subject to HACCP (Hazard Analysis and Critical Control Points). In <\/span><a href=\"https:\/\/www.confcommercio.it\/-\/haccp\" target=\"_blank\" rel=\"noopener\"><span style=\"font-weight: 400;\">HACCP protocol<\/span><\/a><span style=\"font-weight: 400;\"> a natural person or company, who assumes the role of FBO (Food Business Operator), must be indicated as the person responsible for verification and quality.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">The second category is subject to the <\/span><b>food safety<\/b><span style=\"font-weight: 400;\">which in each case involves checks on the installation, maintenance and analyses to verify that the result of the operation of the installation is protective of the health of those using it.<\/span><\/p>\n<h3><strong>Water as a vital element: risks and opportunities<\/strong><\/h3>\n<p><span style=\"font-weight: 400;\">When talking about water, one often hears the argument that water is the source of life, or that life originates from water, or that <\/span><a href=\"https:\/\/drinkatering.com\/en\/world-day-to-combat-desertification-drought\/\" target=\"_blank\" rel=\"noopener\"><span style=\"font-weight: 400;\">there can be no life on a planet without water<\/span><\/a><span style=\"font-weight: 400;\">. These sentences highlight how important water is for human life, but in detail they also point out that water, if not subjected to proper treatment, changes quickly, creating bacteria, moulds, fungi and many other forms of life.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Aqueduct water counteracts these formations with <\/span><b>a careful choice of sources or<\/b><span style=\"font-weight: 400;\">where this is not possible, with purification systems first and bacterial proliferation control later. Chlorine and other antibacterial substances are introduced into the water supply to <\/span><b>keep the water safe during transport<\/b><span style=\"font-weight: 400;\">.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">In point-of-use water irrigation systems - be they dispensers in companies or schools, or Water Houses in public squares - filtration organoleptically alters the qualities of the water dispensed, removing flavours, odours and chemicals including chlorine.<\/span><\/p>\n<h3><strong>Critical points in the maintenance of water supply systems<\/strong><\/h3>\n<p><span style=\"font-weight: 400;\">The filter, coils and delivery point are <\/span><b>in continuous contact with water<\/b><span style=\"font-weight: 400;\">. Water, as we said before, if not covered with an antibacterial, can easily change. Stagnation, heat, poor hygiene can facilitate the spread and proliferation of bacteria.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">La <\/span><b>maintenance<\/b><span style=\"font-weight: 400;\">carried out regularly by qualified personnel, ensures that an environment favourable to bacteria is not created. Pipes, taps, fittings are cleaned with special material that is inserted into the system and left in contact for the necessary time.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Filters must also be replaced, which can become saturated if they are not changed. A saturated filter no longer does its job, but rather becomes a source of bacterial proliferation.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Particular attention must be paid to the ultraviolet lamp, which acts as a bactericide in a system. To function properly, it must ensure adequate contact between the water and the UV rays it produces and irradiates. For this it must be cleaned at least every 6 months and replaced once a year.<\/span><\/p>\n<h3><strong>Frequency and modalities of interventions<\/strong><\/h3>\n<p><span style=\"font-weight: 400;\">To verify that everything has been done correctly, it is good practice to take a sample and perform a bacteriological analysis at an authorised laboratory, certifying the goodness of the work.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">In working environments without food production, we recommend:<\/span><\/p>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Bacteriological analyses at least once a year<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Cleaning UV lamps every 6 months<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Annual UV lamp replacement<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Change filters according to specific instructions and conditions of use<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Complete system sanitisation on a regular basis<\/span><\/li>\n<\/ul>\n<p><span style=\"font-weight: 400;\">Le <\/span><b>bacteriological analyses<\/b><span style=\"font-weight: 400;\"> are compulsory in all cases.
